If your like me and time always seems to be short, but you are looking for healthy snacks or desert items, this 5 Minute treat/snack/desert is just the thing. Keep in mind, all ingredients are exchangeable given your personal likes.
- 1/4 cup cashes
- 1/4 cup gluten free oatmeal (Bob’s Red Mill)
- 1/4 cup cocoa nibs (optional)
- Pinch sea salt
- 10 dates (Medjool make these more chewy)
- 2 dried figs
- 1/3-1/4 cup peanut or almond butter
- 2 Tbs goji berries or raisins
- 1 Tbs coconut oil
- 1 tsp vanilla extract
Method: Place cashews and oatmeal and cocoa nibs (if using) and sea salt in a food processor, or blender if no food processor, and blend until chopped but not powder. Remove to a separate bowl and then place remaining ingredients in food processor and blend until well combined. Then put chopped nuts and oatmeal in processor and blend together until well combined. Next, separate into equal size portions i.e. balls or press into a baking pan, no baking just forming. Cut into desired pieces and enjoy.
These will keep in a stored container in the refrigerator for about 3 weeks. Good luck keeping them around that long.
Optional ingredients: 1/2 chocolate bar cut up in pieces and blended with other ingredients. Also consider adding cinnamon for a twist of flavor.
